Rotisserie chicken is fast becoming as common in freshly prepared food circles as hot dogs and hamburgers. Hickory's 1.9 Rotisserie was designed in response to market requests for a compact, versatile, and efficient countertop oven. The 1.9 is ideal for smaller retail outlets or for customers who want to add rotissserie chicken to their current menu alternatives. Nine individual motors drive nine separate spits to assure maximum cooking availability. There are no chains or complex drive mechanisms to wear out or break down. A removable rear panel and easy-to-clean parts reduce maintenance and result in a cleaner appearance and a neater cooking area. For the ultimate in space-saving convenience, the Model 1.9 is also designed to be wall mounted, when your countertop space is extremely limited.

Cooking: Nine single-chicken spits allow from one to nine chickens to be individually loaded, cooked, and unloaded. The unique individual spits are also useable as stands, thereby saving space and adding convenience when preparing, loading, unloading, or displaying the chickens after cooking. The spits are especially designed for easy unloading with a standard barbecue fork or tongs. The heated air inside the rotisserie is constantly circulated by dual convection fans for extremely even and efficient cooking that is unmatched in a unit of this size.

Merchandising: The 1.9 Rotisserie's tempered dual glass enclosure provides for maximum lighting and full visibility from three sides. Hickory's first "sun-roof" design features a dual glass top panel which allows maximum ambient light to illuminate the roasting chicken, and also enables the retailer to highlight the cooking product by directing overhead store spotlights directly into the unit.

Hickory's award winning Model 5.5 Barbecue is the most versatile countertop rotisserie on the market today. Guaranteed to produce profits, the 5.5 has been designed for ease of operation and menu versatility. It will batch cook to perfection with a sophisticated point of purchase merchandising display. The operator can choose between rotating spits and wire basket trays, or combinations of the two. Constantly rotating baskets and spits catch the eye of customers. The 5.5 uses a double rotational planetary drive system to assure the pinnacle of product quality. All of this is accomplished in a minimum of counter space, in an oven that will complement any countertop location.

Cooking: Nine cubic feet of cooking space provides a capacity for up to 25 chickens per batch per hour. (The 5.5 will also accommodate roasts, ducks, small turkeys, brochettes, etc.) The removable rotating interior allows for the optional cooking of large roasts, turkeys, and suckling pig.
The user can use both the convenience of basket loading, and the self-basting capability of rotating spits. Each 5.5 comes complete with 5 spits complete, 5 hanging baskets, 1 turkey spit, and 2 turkey skewers. Thermostatic controls, displayed in Centigrade and Fahrenheit scales, enable settings for baking, barbecuing, and warming.

Hickory’s Model 6.5 Barbecue is the newest generation countertop rotisserie on the market today. The 6.5 has been designed for extra capacity the same foot print as the Hickory 5.5. With full pivot doors on front and back the 6.5 will also act as a pass thru unit . Full interior access allows for ease of operation and cleanability. It will batch cook to perfection with a sophisticated point of purchase merchandising display. The operator can choose between rotating spits and baskets spits, or combinations of the two. Constantly rotating baskets and spits catch the eye of customers. The 6.5 uses a double rotational planetary drive system to assure the pinnacle of product quality. The versatility of the 10.10 allows each of the two cooking compartments to be operated independently. The operator may use both sections to roast, one to warm and one to roast, or both sections to keep product warm. The 10.10 uses a double rotational planetary drive system to assure the pinnacle of product quality. The unit can be used with spits or baskets in any combination to prepare products ranging from whole chickens and ducks, to chicken parts, ribs, sausages, and brochettes. The removable rotating interior allows for the optional cooking of large roasts, turkeys, and suckling pig. The 10.10 achieves all of this in an area of less than eight square feet while merchandising the product in an eye-catching, mouth-watering display.

The 10.10, which occupies only eight square feet of floor space, provides a capacity of up to 50 chickens per batch per hour. The user can employ both the convenient rotating baskets and self-basting spits. Each 10.10 cooking compartment comes with 5 spits complete, 5 hanging baskets, 1 turkey spit, and 2 turkey skewers.


Hickory's Model 14.5 rotisserie is our largest double batch cooking model, and has been designed with a merchandising characteristic. The 14.5 is the right application for those restaurants and prepared food establishments that want to highlight their freshly prepared rotisserie products. The double rotational planetary drive system assures the utmost product quality.

COOKING:
The unit has the versatility to operate as two separate cooking areas to allow for staggered batch timing, or to allow for the preparation of different products without co-mingling the individual product flavors. The interior cooking area is fully illuminated. The 14.5 can accommodate 42 chickens per compartment for a total of 84 chickens per batch and cook them to perfection in less than one hour.


Model 5.7

Hickory's 5.7 Rotisserie is specifically designed to yield the most product within a narrow profile, and as a result gives tremendous capacity in the least amount of space. The Model 5.7 uses gas generators for energy efficiency and features an optional rear burner using infrared ceramics or ceramic logs, to simulate an open hearth effect. The 5.7 batch rotisserie employs a double rotational planetary drive system to assure the utmost product quality. With an exceptionally large frontal glass area, the 5.7 is the right choice for those prepared food establishments that are highlighting their freshly prepared rotisserie products.

Cooking: Thermostatic controls activate the infrared gas burner/generators when the temperature falls below a prescribed setting. Each gas burner can be individually controlled, as well as the rear "fireplace" burner, which can be used with ceramic logs to project an open hearth effect. In less than nine square feet the 5.7 can accommodate 35 to 42 chickens per batch and cook them to perfection in less than one hour. The 5.7 will also accommodate roasts and ducks. Other optional attachments are available to cook product that cannot easily be placed on a spit.

Merchandising: The interior cooking area of the 5.7 is fully illuminated with lighting mounted in both the front and rear areas. The cooking compartment features heat resistant tempered glass to allow for an unobstructed view of the constantly rotating roasting process. The unit can be optionally configured for pass-through applications. The 5.7's best viewing position is directly from the front so that the consumer becomes enticed with the sight of the delicious roasting product.

Hickory's Model 7.7 Rotisserie is our largest batch cooking model, and has been designed with a 360 degree merchandising characteristic. The 7.7 is the right application for those restaurants and prepared food establishments that want to highlight their freshly prepared rotisserie products. The 7.7 can optionally use a combination of woods such as mesquite, hickory, oak, or charcoal, in combination with infrared gas burner/generators, to assure even and consistent cooking. The Model 7.7 uses a double rotational planetary drive system to assure the utmost product quality. An optional rear fireplace burner can be used with ceramic logs or infrared ceramics to simulate an eye-catching open hearth merchandising effect.

Cooking: The unit has the versatility to operate as two separate cooking areas to allow for staggered batch timing, or to allow for the preparation of different products without co-mingling the individual product flavors. Thermostatic controls enable automatic temperature activation of the infra-red gas generators, and assure that the gas burners will ignite when the cooking temperature falls below a prescribed setting. In less than 12 square feet the 7.7 can accommodate 56 chickens per batch and cook them to perfection in less than one hour. The 7.7 will also accommodate turkeys, roasts and ducks. Optional attachments are available to cook product that cannot easily be placed on a spit.

Model 7.7

Merchandising: The interior cooking area is fully illuminated with angled flood lighting. 90% of the exterior surface of the cooking compartment can be covered with heat resistant tempered glass to allow for a fully unobstructed view of the roasting product. The unit can be optionally configured for pass-through applications. The 7.7's best viewing position is in the center of an establishment to allow for consumer vistas from all sides.

Merchandising: The interior of each cooking area is illuminated with quadrant lighting and is completely visible to both the operator and the public, enhancing merchandising capability. Two separate cooking areas allow for the preparation and display of multiple items during peak hours, without concerns for the co-mingling of flavors.

The Model 10.10W batch rotisserie is designed with a self-service, dual access warmer located in the lower compartment.
