Hickory's Model 3 is perfect for the small to medium sized retailer with limited capacity requirements. The small frame and large merchandising area provide limitless profit opportunities. The unit features 3 spits with a capacity of 15 chickens per hour.

The Models 3ES and 3GS are slightly shorter and narrower than the Model 3. These models allow placement of the unit directly on the countertop.

The "S" models feature three spits and a 9 to 12 chicken per hour capacity.

Hickory's Model 7 is perfect for the medium to large sized retailer. Hickory's unique, rotating spit method of barbecuing yields an evenly cooked, self-basted, moist, and tender product, in a way that "lazy-susans" and standard trays cannot. Hickory's barbecue ovens, with their stainless steel construction, have developed a reputation throughout the food industry for profitability, reliability, merchandising capability, and long service life. The small frame of the Model 7 and large merchandising area provide limitless profit opportunities. The unit features 7 spits with a capacity of 35 chickens per hour.

The large glass face of the Model 7 makes it an excellent merchandising tool and features single-sided merchandising for "against-the-wall" placement.

Cooking: All of Hickory's vertical rotisseries offer the choice of "batch" or "continuous cook" roasting. In batch cooking, the unit is loaded from bottom to top, and then unloaded from top to bottom, providing the lowest spit with the most cooking time.

Hickory's "continuous cook" process is the most reliable method to deliver freshly cooked product to the consumer. The spits are loaded from top to bottom. Since heat's natural tendency is to rise, the top spit finishes cooking first and is removed. Each successive spit is then moved upwards one position, and an uncooked spit is added to the bottom of the rotisserie. The retailer can now deliver freshly cooked and delicious product to each customer, because the "continuous cook" methodology allows the rotisserie's production to correspond to demand.

Model 45WDG

Hickory's 45WDG rotisserie is the ultimate European styled merchandiser. The 45WDG is designed specifically for upscale, gourmet operations where merchandising is vital. It roasts product to perfection while providing an unsurpassed point-of-purchase display. By placing the unit in a prominent location, where the consumer can see the succulent product, smell the delicious aromas, and hear the sizzle, you are actually performing a food show that will complement any retail food operation. Its versatility allows the operator to cook on either half of the unit without co-mingling fats. The unit uses standard spits for poultry and roasts, and basket spits for turkey breasts, ribs, whole fish, and brochettes.

In addition to the all Stainless Steel Model, the unit is available in a Black & Stainless (BS) motif, or a Black & Brass (BB) motif as shown above, to accentuate its sizzle. The unit is also available in electric. Accordion side access doors can be supplied upon request.

Sliding, tempered glass panels allow clear viewing with the added security of a heat barrier.

Hickory's Model SM20 is designed for retail applications where floor space is at a premium and moderate rotisserie production is required. The SM20 features an integrated warmer which will hold one hour of cooked product.
